Australia's only cidery working exclusively in Méthode Traditionelle — the traditional method more commonly associated with sparkling wine. The mill sits on a small farm called The Dales, built into the natural slope of the land. The name nods to Mathew Brady, an Irish-born bushranger raised in Manchester, known for his horsemanship.
