Timboon Railway Shed Distillery

Since 2007, this family-run distillery in a restored railway shed has been making single malt whisky the slow way — ex-fortified wine barrels, heavy-charred on site at their own cooperage. The Port Expression, Tom's Surrender and peated SMOKY 1881 are all worth tasting. The district's illicit bush-still history hangs over the place like a good story should.
